I’m trying to soak up every ounce of zucchini season we have left. Seriously guys, my zucchini intake is INSANE. But how can you not take advantage of the giant squash and their incredible prices this time of year?! The answer is you can’t. Zoodles, grilled kebabs, breads, cookies and, now, oats. I’ve been eating zucchini oats on the DAILY and today I am going to share with you one of my favorite basic (and quick!) recipes for it, my 2 minute chocolate zucchini cauliflower oatmeal.
So, you’ll notice that zucchini isn’t the only veg in this oatmeal. In true dietitian form, I’ve PACKED this with veggies. The best part of this veggie loaded recipe? It tastes like one, giant chocolate cookie and who doesn’t want THAT for breakfast!? Maybe I should re-name this recipe “health in a bowl that tastes like a cookie”. What do you think?
We haven’t even addressed the BEST part of this recipe. Okay, that’s totally debatable because there are so many fantastic things about this recipe. It takes 2 minutes. TWO MINUTES. Now that’s fast food I can get on board with.
- 1 small zucchini or ½ of a large
- ⅓ cup quick oats, dry
- ⅓ cup riced cauliflower, frozen, uncooked
- ½ cup water
- ½ tsp vanilla
- 1 tbsp maple syrup
- 1 tbsp cocoa powder
- Shred zucchini either with a hand held grater or in a food processor
- In a medium sized bowl combine all ingredients and mix thoroughly
- Microwave for a total of 2 minutes, stopping to stir ever ~30 seconds
- Top with your favorite topping and enjoy!
Other options to add: greek yogurt, nut butter, egg white or flax or chia seeds.
